2 (3/4 lb) pork tenderloins, trimmed
1/2 tsp freshly ground black pepper
1/4 tsp salt
Olive oil flavored cooking spray
1/2 cup apple cider
1.5 tsps chopped fresh thyme
1 tbsp light stick butter
- Cut each tenderloin crosswise into 6 slices. Place pork in a alarge heavy-duty zip-top plastic bag. Pound pork slices slightle with the palm of your hand.
- Heat a large nonstick skillet over medium-high heat. Spring pork slices with pepper and salt; coat pork with cooking spray, Add 6 pork slices to pan; cook 5 min on each side or until done. Transfer pork to a serving plate; keep warm. Repeat procedure with remaining pork.
- Add cider and thyme to drippings in pan, scraping pan to loosen browned bits. Cook over medium-high heat 1-2 minutes or until reduced to 1/4 cup. Reduce heat to low; add butter, stirring until butter melts. Remove pan from heat; drizzle sauce over pork. Serves 6.
