This is not my recipe. I'm putting it on here because I can't find it anywhere but in a weight watchers 5 ingredient, 15 minute magazine I bought. And I need to pin it. So, here we are.... And this is not my picture. Just like not being able to find the recipe, I couldn't find the picture. So this is something close I found on www.belleaukitchen.com. I do want to make a few changes and if they turn out well AND healthy, I'll repost my version.
1 (14.5) can stewed tomatoes, undrained and chopped (author's note - to easily chop tomatoes, try snipping them with kitchen shears while they're still in the can.)
Thyme sprigs (optional)
- Rub creole seasoning over chicken
- Heat oil in a large nonstick skillet over medium high heat. Add chicken to pan; cook 2 minutes. Turn chicken over and add okra, chopped thyme and tomatoes. Bring to a boil; cover, reduce heat and simmer 10 minutes.
- Uncover and cook 2 minutes or until chicken is done and liquid is reduced by half. Garnish with thyme sprigs, if desired. Serves 4.
