1 cup each of your choice - sliced yellow or green zucchini squash, sliced mushrooms, halved grape
tomatoes, largely chopped red onion, chopped bell pepper, sliced carrots, chopped parsnips, chopped cauliflower, chopped butternut squash
2 tbsp olive oil
Pinch salt and pepper
1 tbsp minced garlic
Bring 2 ½ cups chicken broth to a boil in a large pot. Add 1 cup of brown rice and 1 tbsp of chicken seasoning.
Cover and reduce heat and simmer for 45 minutes or until all broth is absorbed.
Meanwhile, combine veggies of choice, salt and pepper and olive oil in a large bowl. Toss to combine. Set the oven to a low broil. Cover a baking sheet with foil and spread the vegetables on the foil. Broil for 10 minutes or until vegetables just begin to char. Watch them carefully, it’s easy to burn them!
Serve chicken breast with veggies over brown rice.
