Apple Cinnamon Oatmeal Waffles (or whatever fruit you like!)

Breakfast is kind of a big deal at our house. Everyone wakes up hungry and there's no chance to prepare a lavish morning meal. We either grab something easy and quick to make or I have to come up with something that can be pre-made. These waffles are a HUGE hit.
They are super yummy, super healthy and super adjustable. I made the batch pictures with apples and cinnamon as it is FINALLY starting to feel like fall around here.
I've made with with several types of berries (fresh is best to avoid waffles that are soggy). My son loves anything that ends in -berry so the blueberry, raspberry, blackberry and strawberry varieties are VERY popular in the summer. I'm not personally a banana fan but the rest of the house loves the version with bananas for banana bread waffles.
One AWESOME feature of these waffles? They freeze GREAT. Forget store bought frozen waffles. make a big batch of these and you can actually feel really good about the nutritious frozen waffles your family is eating.
Oatmeal Waffles with Fruit
1 1/2 Cup Old Fashioned Oats
½ Cup White Flour
3/4 Cup Wheat Flour
2 Tbsp Honey
1 tsp Baking powder
1 tsp Baking Soda
½ tsp Salt
1 Egg lightly Beaten
1 3/4 Cups Buttermilk (see recipe for homemade buttermilk)
2 Tbsp unsweetened applesauce
1 tsp Vanilla
1 Cup apples, berries, bananas, strawberries, etc – optional
Whisk all ingredients together and allow to stand for a few minutes to thicken batter. Then pour into waffle pan and bake according to manufacturers instructions. Top with fruit or yogurt if desired.
